Ham Loaf

I just got an e mail from my Aunt Rose, one of my many "good egg" aunts. She found among her cookbooks a cookbook from the First United Methodist Church in Gurdon, Arkansas. This cookbook, with a yellowed cover, features my mother's recipe for "Ham Loaf". It goes like this:



Ham Loaf

1lb. ground ham 1 beaten egg
2lb.ground pork !/2 c. milk
1 c. bread crumbs 3 tbs. tomato soup
1/2 tsp. salt 1/2 paprika

Mix all together, form into loaf and bake at 350 degrees for 1 1/2 hours

Mustard sauce:
1/2 c. mustard
1/2 c. tomato soup
3 beaten egg yolks
1/2 c. vinegar
1/2 c. sugar
1 stick melted oleo or butter

Cook in double boiler till thick. May be reheated.

My goodness. When I was a child, I loathed this concoction. When I was a teen, I grew to like it a bit. By my twenties, in the way such things work, I became fond of it.

I wish I had my mother's ham loaf now.
