Artichoke Heart

I'm not much for the eating of artichokes, but I'm all about the peeling. You pull back leaf after leaf, in search of the heart. I used to imagine that an artichoke heart held some special promise or savor, as people searched for them so assiduously. But there's probably some lesson too subtle for me about picking through a vegetable in order to find a different consistency of vegetable.
